What I’m reminiscing about:

High school. All my friends are coming home now that everyone is graduating and we had a little reunion on Monday night (more to come on that Friday). It’s so fun having everyone back again!!

What I’m loving:

My cousin Ean is having to close his account at the gym we both go to and he already had personal training purchased. They were able to transfer it to my account so now I have 12 personal training sessions for free!!! I’ll take it! E-bomb, you rock!

Studying for my certification exam while my summer classes are still slow.

Moving back in to our house…we’ve been remodeling so we’re staying in a rent house right now. I can’t wait to get back to our house but I am not looking forward to all the unpacking that we have to do!

All of my on boarding stuff for a new job I just accepted earlier this week. Back to these clothes I go!

What I’m reminiscing about:

My sorority days and my time at Oklahoma. As graduation is nearing, it’s bringing back all the memories of being in college there. I’ve seen so many girls doing senior pictures with their friend groups and Pi Phi had a little senior night. Wow. So long ago!

What I’m loving:

THIS VIDEO. For some reason, it just puts a smile on my face!

If you haven’t seen the Michigan football team do the running man, you need to YouTube it right now. Makes me laugh every time. My brother taught his baseball team to do this and then they recorded it. Love it.

What I’ve been up to:

Trying to take my yoga practice outside on some mornings. There’s just something about a quiet morning and doing some yoga in front of the pool.

Studying for my very last final and applying for jobs. Sigh. Adulting.

What is my favorite spring cleaning tip:

To get rid of all the winter clothes in your closet that you didn’t even wear. I like to do this after every season. My clothes get all sorts of piled up and I end up keeping it because I think i’ll wear them next season, and then I don’t, and then they sit. Just do it now!

What I’m eating:

I went straight to the source to get the answer for this…my iPhone pics. Lately I’ve been having so much fun in the kitchen creating, and then photographing, and of course eating. It’s become a hobby. I could probably make a post on all my pictures, so instead i’ll just show you a few.

Just this time last year. Today…but in 2015 I was blogging about our first snow day of the year.

The relationships that i’m making with my kiddos at Church. If you follow me on Instagram (DO IT!) then you saw a picture I posted with my little Alina. This girl gives me a run for my money and the other morning she was playing around on my phone and took about 5 videos that make me smile every single time I watch them. I love Sunday mornings with my 4 and 5 year olds!

What we’ve been up to:

Speaking of Church, and kiddos, and following me on Instagram, and what i’ve been up to…this past weekend was the high school retreat. Church retreat weekends are incredible and life changing and I was so happy to be a part of this one. Students dedicating and re-dedicating their life to Christ, fellowshipping with one another, pigging out on tons of sugar (we did lots of that!), not sleeping, and just enjoying each other. Is there anything better?

A little co-leader love, plus some photo-bombers. Jen (the one in the red next to me) and I co-lead a group of freshmen girls, and Megan (the one taking the picture) co-leads a separate group of freshmen girls all at the same campus. This weekend our groups were merged and it was A BLAST.

As for what i’m watching…

I found a new show that I am IN LOVE with. Seriously. I watched the 2 seasons in a week. I was first intrigued when I saw Lori Loughlin starred because I’M OBSESSED WITH HER (see above “what i’m excited about”), but then when I realized it was an old western drama tv show that was it. Season 3 aired on Sunday and you all need to go watch it…this is not a drill. 🙂

Apparently nothing of any relevance because I couldn’t find any pictures. But I will tell you it’s just been the usual workout clothes and work clothes (as usual). With some Nike shorts and fuzzy socks thrown in for good measure!

What I’m doing this weekend:

Hopefully visiting my friend who just had her baby! Other than that I work all day Friday, babysit Saturday, Church on Sunday, and then i’ll hit the gym a couple times. Nothing out of the ordinary over here!

Oooooh, lots. February is blah to me so i’m glad it’s coming to an end. But I always look forward to March because….two words….

Spring. Break.

A week off of school, some days off of work, vacation planned. Even if it is the last Spring break i’ll ever have (sigh)…bring it on!

And then there’s baseball season starting, getting outside more, Easter, my bestie coming home from school for her birthday. So much fun to be had.

What else is new:

A LOT. But i’ve already put so much in this post, sooo that’ll have to wait.

What is my favorite Easter tradition:

When mom decorates the dining room table. Mom was an interior designer (well, still is considering that’s not something you just grow out of…lucky for me) and she makes everything look amazing all the time. I love our house around the Holidays.

What I’m eating:

Lately, it’s been a lot of my creamy chocolate fudge protein shake. I’m pretty sure I have one every day, if not, then every other day.

In the mornings, i’m swearing by my toast (I love the charred black on it so I like to burn my toast), avocado smeared on top, and then scrambled egg whites on top of that. Throw on some pace picante and you have a nutritious, filling breakfast.

I made my peanut butter cup protein pie when Morgan was home…and all I got was ONE SLICE and it was gone. She ate the whole thing in like 2 days. It’s good, friends, it’s good.

What I’m reminiscing about:

Well, since I just mentioned Morgan…i’m reminiscing about her being home this past month. She was excited to go back but we had some fun while she was here!

What I’m loving:

Lately, it’s been sleep. When I can get some sleep that is…I feel like i’m constantly tired. Monday night I crashed around 11:30, like didn’t even get my episode of One Tree Hill in because I was so tired. Well yeah, I woke up at 8:15 yesterday morning with no reason to. WHY BODY, WHY?

Mom has been gone this week visiting her dad so my pops and I have been watching The OC together like we used to. Other than that, we’re just trying to survive on leftovers, dirty laundry, and paper plates 😉 I kid about all that…we’re self-sufficient when she’s gone but it’s easier when she’s doing all those things. Haha

What I’m dreading:

Probably if anything, work this weekend. I’m working two jobs while i’m going to school full-time, so the last thing I want to do is wait tables on the weekends. Ya gotta do what ya gotta do.

What I’m excited about:

I officially activated my gym membership on Sunday. So now that i’m “up and running”, i’m ready to keep on it with my group exercise classes…but also (because this is just me) i’m a little nervous because now i’m like “I won’t like it”, “This is 2 years”, “What if I get bored with it?”, you know…just being my normal anxiety-filled self. Working on that too!

At night, you can find me re-watching an episode of One Tree Hill before bed. Am I the only one that loves the older seasons better?? I kind of feel like that’s how it is with all my shows though. My dad and I are thinking of not even going into season 3 of the OC because it gets all dark on us.

Right now, i’m typing this post during my break in between classes so i’m hearing students walking around, typing, talking, etc while i’m playing NF radio on Pandora.

But when I get out of my night class, i’m heading home to finish watching this week’s Bachelor episode! Watching some of my favorite shows has become my “me time” lately when I need to relax!

What I’ve been wearing:

On Tuesdays and Thursdays, these leggings (well and other pairs) are on. When i’m sitting in classes all day I do not want to be uncomfortable. I always have some leggings and a t-shirt/tank/sweatshirt on.

What I’m doing this weekend:

I’m working Friday night, which i’m bummed about because I could have gone to a family dinner.

Saturday is going to be my relaxation day. I usually always try to have one day each weekend where I don’t have anything to do. This gives me time for exercise, schoolwork, blogging, etc. I totally recommend this if you’re not doing it already!

Sunday i’ll probably do some yoga before I work the dinner shift at work.

Next month, i’m looking forward to…uh…nothing right now. There’s honestly nothing about February that gets me excited. It’s cold, there isn’t a holiday off from school. Well I guess I can be excited because it is a short month???

As I looked at this question, I definitely thought of those little Debbie chocolate brownies with the icing and sprinkles. So random, but that’s what came to mind! However, #thankyougluten I can’t have them. Maybe i’ll try and make my own??

Last year, I made a heart shaped cake for my family because i’m #sosweet 🙂

As always…i’m starting off with a little Recipe Club with Andrea.

What we’re eating:

Right now one of my fitness goals is meal planning. But I have found that this is really hard because 1. I end up with a ton more food than I can eat and it sits in the fridge forever. and 2. Since I still live at home, my mom will cook and we have leftovers that i’ll usually clean up as I take to lunch.

But these past couple weeks i’ve been digging my Peanut Butter Cup Protein Pie.

I’m reminiscing about my first year at Oklahoma. Morgan came home from her first semester of college, so i’m just sitting here thinking about when I was there and came home for my first holiday break. My first night back I celebrated with Alyssa and her family as she turned 18!

Not having classes this week. While I still have a lot of school-work to do, i’m just thankful that I don’t have to drive 45 minutes to school and sit in lectures for 5.5 hours straight twice this week.

What I’m reminiscing about:

I’m reminiscing about when I was younger. Lately before bed i’ll turn on the TV and watch Nick@Nite. It’s usually Full House and Friends. And i’m brought back to childhood with these good memories. Oh, how I love Full House 🙂

The fact that i’ve found myself enjoying the mornings (SHOCK!). I mean, I am a night owl. But i’ve been waking up early, doing things, and getting stuff done. It makes the rest of the day go so smooth.

What is my favorite Halloween tradition:

I love seeing the kiddos come around the neighborhood to get candy. Mainly because of the excitement, the anticipation, and the fun that the holiday brings for kids. Ahhh, I remember those days. My favorite Halloween tradition is watching all the movies I used to watch as a youngin…this being one:

As always…i’m starting off with a little Recipe Club with Andrea.

What we’re eating:

First off, I apologize for these pictures being bad quality. I don’t know what happened but the lighting got all screwed up. My go-to breakfast if I eat one is an omelet. I sautee all my veggies and turkey bacon in the skillet.

Set them aside and cut up your maters.

I then pour my egg whites in the pan ’til one side cooks, and then flip it for the other side to cook.

Once it’s flipped I top it with my cheese and veggies and make it look a hot mess.

Take out your salsa and enjoy!! It’s super easy and super delicious.

Zoodles and meatballs are my thing right now. Mom bought me a spiralizer thing (sorry I forgot the actual name) and after I get my zucchini all spiraled out it’s 15 minutes before a delicious and easy dinner is ready. It looks a lot more pretty than thic picture. Don’t you hate when you’re halfway through eating and you’re like “I FORGOT TO TAKE A PICTURE FOR MY BLOG!” Haha #lifeofablogger

And then of course fajitas. Basically I live off my stove. With pre-cut tyson chicken breast strips we put them in the skillet to thaw and get warm.

Take them out and sauté our peppers and onions.

Throw them all together to makes sure everything is heated through.

And again top my tortilla with cheese and the veggie/chicken mixture and pull out some guac. YES yum delicious so good.

Every year when we go to Iowa, we make these chocolate scotcheroos. And every year I probably eat my weight in them.

I made Shay’s sweet corn chili. My dad was a fan as well as me. This makes a pretty big batch and within probably 3 days it was all gone. Yummy.

What I’m reminiscing about:

I’m reminiscing about our vacation we just took. I just got back and while it is good to get into my routine again and sleep in my own bed, I miss it. I miss my extended family, I miss vacation, and not having to work. So instead i’ll choose to store the memories and wait until September when I get to see grandpa again.

What I’m loving:

Redbridge’s gluten free beer. For my 21st, my brother wanted to get me gluten free beer because he loves to make fun of my food allergies. So he got me mom bought an assortment six pack of gluten free beers. The first couple that I tried were not good, so I threw them out, but this one I actually liked. And mom thought it wasn’t half bad either!

What we’ve been up to:

Well, since we just got back from vacation, that’s what we’ve been doing. Otherwise it’s just getting Morgan’s stuff all ready for her move-in day. What I’m dreading:

If I had to choose one thing that i’m dreading it’s the fact that school will start this month. Like, by the next time I do one of these posts I will have started classes. I love learning new things, but I don’t love the homework, the tests, the constant studying, the projects, the papers, etc. But on the bright side it will be my last first day of school. Yikes i’m old 😉

What I’ve been working on:

I’ve just been trying to work on myself lately. And this month it’s been a lot of my physical self. I worked out 6 out of the 7 days last week and my goal for the rest of the year is to do some sort of exercise 5 days out of the week. It’s crazy how I feel so much better mentally when I feel good physically. I don’t know, maybe that’s weird?

What I’m listening to:

I love listening to our sermons online. I haven’t been to Church in the past three weeks since we’ve been out of town, so I have been catching up a lot online. I love sitting down, watching our pastor speak, and being able to pause whenever I want to take notes. If you’re looking for sermons to watch online, our pastor is phenomenal.

Thanks to summer I have been wearing this home tank from Taralynn’s lately. I posted about this outfit a couple of weeks ago, and this tank is in the wash A LOT. Yep.

To be completely honest there’s nothing about August that I just LOVE. It’s probably the hottest month here in Texas, classes start again, Morgan’s going to college, and my friends all leave. But my brother will get his license so that’s pretty exciting!

You know, i’m going to miss not having classes. For the rest of summer I have Tuesday and Thursday free to myself right now. And I love it. But the thing i’ll miss most is having my friends here. These friends all leave me to go to college far away and it gets a little lonely without my pals around.

What’s Up Wednesday & Recipe Club

Another last wednesday of the month means another What’s Up Wednesday post with Mel, Shay, and Sheaffer. It also means another edition of Recipe Club with Andrea.

What we’re eating:

I’ve decided to go on a 10-day sugar detox with the Today Show hosts. I saw that they were doing it and really wanted to try it to see what kind of benefits and effects it had on my body. So this pancake recipe is Molly-certified sugar free. I saw a pin on Pinterest and was “pin-spired” to make this. Let me just start by saying i’m really not good at giving recipes. Normally I just dump things into a bowl until I think it’s good, so my measurements may not be exact or to your preference.

Ingredients:
2 Frozen Bananas (or 1 if you don’t want as much of a banana-y flavor)
2 Eggs
Ground Cinnamon to taste
Flax Seeds
Vanilla Extract
Chocolate Chips (if you don’t care about going sugar free!)

I didn’t think about taking pictures until I mashed up my bananas…

Take your desired amount of frozen bananas and mash them up with a wisk.

Next, crack your eyes into the bowl and mix.

We bought these travel flax seeds packet, so I decided to put in about half of one of these packets. I’d never had flax seeds before. Flax seeds are high in omega-3 fatty acids, fiber, and magnesium. What a simple way to add these nutrients to your diet. You don’t even know they are in there!

I’m a fan of cinnamon. I shake it on my coffee, sprinkle it on some fruits, so for me the more the merrier. I’d say I probably put in about a tablespoon or so.

Mix those ingredients together…cook it on a griddle or pan just like a normal pancake and voila! It’s not your typical pancake and surely doesn’t look like it, but I liked it as a little change from the regular. And I felt healthy eating them….alongside one of my favorite fruits 😉

My sugar detox isn’t technically over until Sunday. But homegirl was CRAVING some brownies. Listen, i’ve been really good about not having sugar. The other day I drank straight coffee and milk (and I even liked it!). I walk past the chocolate container at work. I’m drinking unsweet tea (SHOCKER!) and everything in between. I decided to cheat a little and go ahead and make these brownies with a recipe I found on google, but tweaked a little. They are homemade, so I knew exactly what was going in them. Now my mom and all her unhealthy food loving ways ate that corner and the top and was so grossed out. But really I liked them.

Ingredients:
1/2 cup of flour (which is good because I have to use my gluten-free flour)
1/2 cup of sugar (I didn’t want to completely cut the sugar out, but I probably would’ve been okay with less)
1/3 cup of cocoa (I used unsweetened – this may give a bitter after taste to some)
1/4 teaspoon salt
1/4 teaspoon baking powder

Mix these all together. Then add:
2 eggs
1 teaspoon vanilla
1/2 oil (vegetable, canola, whichever)

Grease your pan. Bake them at 350 for about 15 minutes. AND YUM! I added a couple butterscotch chips just to see what that tasted like and actually liked it. I wouldn’t want too much, but I thought it was a different kind of edition!

I’ve heard so many treviews about whey protein powder. I read on the ingredients that it contains lactose so i’ve been testing it out these past couple days to see what it does. I haven’t been adding the full amount it calls for, but so far it’s been working for me. A good way i’ve been getting my protein is through smoothies mixed with this whey protein powder. I’ll hopefully be posting some recipes soon!

What I’m reminiscing about:

Lately, I’ve been reminiscing about the fact that I’ve been at my job for 6 months already. My job has been nothing but a blessing and I still find it hard to believe that 6 months ago I was all dressed up, jamming out to Taylor Swift’s new album not knowing what on Earth to expect. I’ve learned a lot in just this short amount of time and cannot wait to see where the future takes me with my company 🙂

What I’m loving:

My new favorite spot in my house. Okay i’ve lived in my same house since I was in Kindergarten, but 15 years later found this relaxing spot that I can take all to myself. It’s within walking distance from my room (get it?) and I get to look over our pool, with the sound of waterfalls, my Bible and coffee in hand, and a blanket or the outdoor fan on if I need to. Nobody else in my family goes out there…so i’ve officially claimed it MINE 🙂

We’ve been celebrating the man himself, we’ve (dad and I) have been working, and we’ve been gardening up a storm!

What I’m dreading:

I really try not to dread anything….but it’s really hard when you have to sit in the same chair for 2 hours at 8:00 in the morning 4 days a week listening to a lecture over “Matrices, Vectors, and Linear Programming” during summer. I mean someone tell me who required this class for business majors so I can have a word with them.

What I’ve been working on:

Lately, i’ve been working on being better about my Quiet Times, spending time with Jesus, and reading through my Bible. On my to-do list right now is to go through all the pages I have tabbed in my Bible and re-highlight the important verses I marked or make notes of what I wanted myself to remember. I’ve had this Bible for so long that things are starting to get faded…and we can’t have that! 🙂

What I’m excited about:

I’m excited about having today off of work. I asked my boss if I could take today to catch-up/get ahead on my homework for this summer class. I’m going to run my errands that i’m really far behind on. I’m going to watch Hoda and KLG with momma. I’m going to go golfing with my siblings. And i’m going to hang out with Emily. Who says Wednesdays weren’t good days?! I think in honor of knowing it’s going to be a great day, i’ll treat myself to one of these bad boys. And that’s enough to get me excited!!

What I’m listening to:

As I started to answer this question the air conditioner kicked in and I realized…wow am I thankful for air conditioning. And at the same time I can hear our printer going off because my mom just sent something from downstairs. And I say wow am I thankful for technology. And I can hear Star Wars playing on the other side of the wall because my brother is watching it in the next room. And I think wow i’m thankful to have not just one brother, but two other siblings. And then it gets me all happy because I realize…the good Lord has truly blessed me.

I love July…I think it’s one of my favorite months of the year. While it’s always scorching hot here in Texas, we do A LOT of celebrating around here. Dad gets another year old, Ryan gets another year old, America gets another year older and we make our annual trek to Iowa to visit our grandpa 🙂

My new drink is this TAZO Iced Passion Tea (found at Target!) mixed with water (equal parts) and then I put a splash of lemonade in. An Iced Passion Tea Lemonade is the perfect drink for summer!

 What I’m reminiscing about:

I’m definitely reminiscing about 6 months ago-1 year. And how time goes by so fast. I’m sitting here in my office at work in the field I want to end up in when I graduate college, with one year left of school, after a great weekend spent with my friends, and living at home being able to see my family as often as I do. I don’t want to take these good days are granted. Sometimes I look out the window at the rain and just think about how God has surely blessed me greatly in just a matter of months.

Sweet summertime and having my friends all so close to me. I love just randomly being able to say “let’s hang out!” and within minutes i’m going hiking with Reeana, or watching movies with Emily, or going to concerts. Or whatever it is. I’m excited about the young adults Bible study i’ve been going to at Church on Tuesday nights. I’ve really missed having Jesus-loving friends my age near me. I wasn’t able to attend the young adults service in the winter thanks to my school schedule, so I just started coming recently. I’ve met some super sweet people and I can’t wait to fellowship with them more.

What I’m looking forward to next month:
Sunshine. I love rain, I love when it rains, the sound of rain, all of it. However this rain is getting crazy and killing people with the flooding. Now i’m just missing the sunshine. It’s summer! I’ve been wanting to come home from work and lay out in the sun for a little while. Or lay out with my friends and I haven’t been able to. My request is really very simple, I’m just wanting a tiny bit of sunshine, you know, to make sure I remember what it looks like again!

What I’m eating this week:
I’m intentionally meal planning this month while I’m using my goal that I talked about last week. Plus, I just like to eat healthy.

 I sautéed these veggies the other day, boiled some of my pasta, and threw some pesto and tomato sauce with it. And it was DEEEELICIOUS.

I’ve also really been into quinoa. So on the side of a sweet potato with some corn, black beans, and cheese (that fails to melt) I was in hog heaven.

My breakfast thing lately has been egg whites and avocado. I saw it all over Pinterest and decided to finally give it a try. I like eggs, I like avocados, I like toast. Why not throw them together right?

Enough to eat it for breakfast, and later for lunch. This salad has a little bit of everything. Nothing says yum like a colorful salad for lunch. Lettuce, carrots, peppers, deli turkey, artichokes, avocado, tomato and black beans. THAT’S a salad my friends!

Doing my daily work outs. They make me feel good. And they make me feel good about myself. Because i’m in finals week, the thing i’m loving most is walking while studying. I’m so glad I figured out this trick that makes studying a little more enjoyable for me. There’s nothing quite like releasing some endorphins during a busy week 🙂

On my way to work I can get halfway through one, and I can listen to the other half either at work or on my way home. It’s just a positive way to start the day. And a change from when I watched them online.

What I’m doing this weekend:
GOING TO BOSTON to see the Sox play the Yanks. America’s greatest game, you know! Eeeeek. My dad, my favorite city, seeing my favorite team, and visiting my grammy and gramps…bring it on!

SUMMER. I’m just ready to be laying out, swimming laps, and using my free time to see friends when they’re home!!
